    Prep and scramble eggs

    In a large wok or skillet, heat 1 tablespoon vegetable oil over high heat. Beat the eggs with a pinch of salt, then pour into the hot wok and scramble until just set. Transfer to a plate and set aside.

    Aromatics

    Add the remaining 1 tablespoon vegetable oil to the wok. Add garlic and cook 10-15 seconds until fragrant.

    Cook seafood and meat

    Add shrimp and diced char siu pork; cook until shrimp turn pink, about 2-3 minutes.

    Veggies go in

    Stir in peas and carrots; cook 2 minutes until vegetables are tender-crisp.

    Fry the rice

    Increase heat to high. Add cold rice; break up any clumps and stir-fry until grains are heated through. Drizzle in soy sauce and oyster sauce; toss to coat evenly.

    Combine eggs

    Return scrambled eggs to the pan and mix with the rice.

    Finish and season

    Drizzle sesame oil, sprinkle white pepper, and season with salt to taste if desired.
