Prepare glaze and marinade base

In a small bowl, whisk together light soy sauce, dark soy sauce, Shaoxing wine, brown sugar, honey, rice vinegar, minced garlic, minced ginger, and chili flakes until the sugar dissolves.

Marinate the ribs

Pat pork ribs dry. Place in a large bowl and sprinkle with salt and pepper. Pour in half of the glaze, toss to coat evenly, and marinate for 20-30 minutes.

Make a cornstarch slurry

In a separate small bowl, mix the cornstarch with 2 tablespoons of water to form a smooth slurry; set aside.

Sear ribs

Heat the wok over medium-high heat and add neutral oil. Remove ribs from marinade, season with a pinch more salt, and sear until browned on all sides.

Add glaze and water

Pour in the remaining glaze and add 60 ml of water. Bring to a gentle simmer, turning the ribs to coat with the sauce.

Glaze and thicken

Continue simmering until the sauce reduces and coats the ribs with a glossy caramelized glaze. Stir in sesame oil.

Finish with slurry

Stir in the cornstarch slurry gradually to tighten the sauce. Simmer until sauce is thick and sticks to the ribs.

Garnish and serve

Remove from heat. Garnish with sliced spring onions and sesame seeds. Serve hot with steamed rice or wok-fried noodles.
