Marinate beef

In a bowl, combine sliced beef with 1 tbsp light soy sauce, 0.5 tbsp Shaoxing wine, 1 tsp sugar, and 0.5 tbsp cornstarch. Mix well and set aside to marinate 15-20 minutes.

Prepare noodles

Soak wide rice noodles in warm water for 10-15 minutes until pliable, then drain well and gently pat dry.

Chop aromatics

Mince garlic. Slice onion and bell peppers (if using). Cut scallions into 2-inch pieces.

Stir-fry beef

Heat a large wok over high heat and add 1 tablespoon oil. Add marinated beef in a single layer and sear 1-2 minutes until browned but not fully cooked. Remove beef to a plate and set aside.

Stir-fry aromatics

Add another small drizzle of oil if needed. Stir-fry garlic and onion (and bell peppers if using) for 1-2 minutes until fragrant and slightly softened.

Toss noodles with sauce

Add noodles to the wok. Pour in 1 tbsp light soy sauce, 1 tbsp dark soy sauce, 2 tbsp oyster sauce, 0.5 tbsp Shaoxing wine, and 1 tsp sugar. Toss quickly to coat noodles evenly.

Combine beef & sprouts

Return the beef to the wok along with bean sprouts and scallions. Stir-fry 1-2 minutes until everything is heated through and coated.

Finish & serve

Drizzle with 1 tsp sesame oil. Taste and adjust seasoning. Serve immediately, garnished with extra scallions if desired.
