Preparation and soaking

    Rehydrate dried scallops

    Place the dried scallops in a bowl and cover with warm water. Let soak for 30 to 60 minutes until plump and tender. Remove and reserve the soaking liquid, straining to remove any grit.

    Prepare winter melon

    While scallops soak, trim the winter melon, cut away the rind and seeds, and dice into roughly 1-inch cubes.

    Gently rinse the rehydrated scallops under cool water and pat dry.

Simmering broth and melon

    In a medium pot, bring the 6 cups of water to a gentle boil.

    Add the rehydrated scallops and the reserved soaking liquid to the pot. Simmer on medium heat for 10–15 minutes to extract the scallop aroma and flavor.
