    Prep rice

    Spread the day-old rice on a tray and fluff with a fork to separate any clumps. This helps the fried rice fry evenly without becoming mushy.

    Marinate Wagyu

    In a small bowl, toss Wagyu beef with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and a pinch of black pepper. Let marinade 10-15 minutes while you prep the vegetables.

    Sear beef

    Heat a large wok or skillet over high heat and add 1 tablespoon vegetable oil. Sear the marinated Wagyu beef in two batches until browned but not fully cooked through. Remove and set aside.

    Scramble eggs

    In the same hot wok, crack the eggs and scramble until just set. Remove and set aside with the beef.

    Cook aromatics and vegetables

    Add the remaining 1 tablespoon of vegetable oil to the wok. Sauté minced garlic and ginger for 30 seconds until fragrant, then stir in onion and carrot. Cook 2-3 minutes until they begin to soften.

    Add peas and greens

    Stir in peas and the white parts of the green onions. Cook for 1-2 minutes.

    Combine and season fried rice

    Return beef and eggs to the wok. Add cooked rice, 2 tablespoons soy sauce, 2 tablespoons oyster sauce, 1 teaspoon sugar, and 1 tablespoon sesame oil. Toss vigorously to combine and fry, breaking up any clumps, until everything is heated through and well coated.

    Finish and garnish

    Taste and adjust with salt and pepper if needed. Sprinkle with the green parts of the green onions and sesame seeds just before serving.
