Tray prep and organization

    Overview and sanitation

    Wash hands, sanitize work surfaces; chill turkey slices, cheese, vegetables, and dressings until assembly.

    Bread and condiments prep

    Lightly toast rolls (optional) and portion mayonnaise, Thousand Island dressing, and cranberry relish into small condiment cups.

    Prepare produce

    Rinse lettuce, tomatoes, and pickles; pat dry and slice as needed; arrange in prep bowls for quick access.

    Assemble Bobbie sub kit

    On bottom half of each Italian roll, layer two slices of sliced oven-roasted turkey, one slice of Swiss cheese, and a generous spoon of coleslaw. Drizzle 1 tablespoon Thousand Island dressing. Cap with top half; slice in half for tray presentation.

    Assemble Cole Turkey sub kit

    On bottom half, arrange turkey slices, place cheese, a few greens, and a dollop of cranberry relish. Top with bread half; cut as desired.

    Assemble Homemade Turkey sub kit

    Spread mayonnaise on bread, add turkey slices, lettuce, tomato, and optional pickle slices; cap with bread and cut.

    Tray assembly

    Arrange the three prepared subs on a large catering tray; label each sub with a small sign; place condiments in bowls around the tray; garnish with parsley if desired.

    Chill and transport

    Keep tray refrigerated until service; if transporting, use a cooler with ice packs and ensure temperature stays below 40°F (4°C).
