Prep and marination

    Marinate chicken

    In a bowl, mix sliced chicken with 1 tablespoon light soy sauce and 1 teaspoon Shaoxing wine. Toss to coat and set aside to marinate for 10-15 minutes.

    Prepare aromatics and vegetables

    Mince garlic and ginger. Thinly slice shallot. Cut broccoli into florets, carrot into matchsticks or slices, bell pepper into strips, and rinse snow peas.

Stir-fry

    Sear chicken

    Heat 1 tablespoon vegetable oil in a wok or large skillet over high heat. Add marinated chicken in a single layer and stir-fry 2-3 minutes until browned and cooked through. Remove and set aside.

    Stir-fry aromatics

    In the same wok, add minced garlic, minced ginger, and shallot. Stir-fry 30-45 seconds until fragrant.

    Stir-fry vegetables

    Add broccoli, carrot, bell pepper, and snow peas. Stir-fry 3-4 minutes until crisp-tender.

    Finish sauce and combine

    Return chicken to the wok. Add XO sauce, 1 tablespoon soy sauce, and 1 teaspoon sugar. Stir to coat everything evenly.

    Thicken sauce

    Whisk cornstarch with 2 tablespoons water to make a slurry. Pour into the wok and cook 1 minute until the sauce thickens. Drizzle with sesame oil and toss to combine.

Serve
