Garlic Pickled Cucumber

Steamed Tiger Prawns & Vermicelli

Prep vermicelli
Soak the dried rice vermicelli in warm water for 10-15 minutes until softened, then drain.

Marinate prawns
In a bowl, toss prawns with soy sauce, fish sauce, oyster sauce, lime juice, sesame oil, vegetable oil, minced garlic, grated ginger, thinly sliced shallot, salt, and white pepper. Let marinate 15 minutes.

Prepare aromatics
While prawns marinate, trim and rinse greens if using, and prepare green onions and cilantro for garnish.

Steam
Line a bamboo steamer with parchment or a greased rack. Spread a bed of the softened vermicelli, top with the marinated prawns and any marinade. Steam 6-8 minutes until prawns are pink and opaque.

Finish & serve
Remove from steamer. Drizzle with a touch more sesame oil if desired. Scatter green onions and cilantro. Serve with garlic pickled cucumber on the side.
Garlic Pickled Cucumber

Make pickling liquid
In a small bowl, whisk rice vinegar, water, sugar, and salt until dissolved.

Pickle
Place cucumber and garlic in a clean jar or container. Pour over the pickling liquid. Add chili flakes if using.

Chill and serve
Refrigerate for at least 20-30 minutes before serving. The cucumber will become crisper if eaten sooner.
