    Prep and measure

    If you roasted a turkey, strain and separate the fat from the pan drippings to collect about 3/4 cup of drippings (not the fat). Reserve and keep warm.

    Make the roux

    In a medium skillet over medium heat, melt the butter. Whisk in the flour to form a smooth roux and cook 2–3 minutes until it reaches a light golden color and aromatic.

    Sweat aromatics

    Add the finely chopped onion and minced garlic to the roux. Sauté 2–3 minutes until the onion is translucent and fragrant.

    Deglaze and reduce (optional wine)

    Pour in the white wine (if using) and simmer until reduced by about half, scraping up any browned bits from the pan.

    Combine liquids

    Slowly whisk in the turkey/chicken stock and the reserved pan drippings. Stir in thyme and sage. Keep whisking to prevent lumps.

    Simmer and thicken

    Bring to a gentle simmer and cook 5–7 minutes, whisking occasionally, until the gravy thickens to a coating consistency. If it becomes too thick, whisk in a splash more stock.

    Finish seasoning

    Season with salt and pepper. For a creamier finish, whisk in the heavy cream to taste and simmer 1–2 minutes longer.

    Strain and serve

    If you prefer a ultra-smooth gravy, strain through a fine-mesh sieve into a serving vessel. Garnish with chopped parsley and serve warm alongside turkey or subs.
