Marinate prawns (optional)
In a bowl, toss the prawns with 1 tablespoon soy sauce, 1 tablespoon lime juice, 0.25 teaspoon salt, 0.25 teaspoon black pepper, and 0.5 teaspoon chili flakes. Let rest for 10 minutes.

Prepare noodles
Soak the rice noodles in warm water for 15–20 minutes until pliable. Drain well and toss with 0.5 tablespoon sesame oil to prevent sticking.

Cook aromatics
Heat a large skillet or wok over high heat. Add 0.5 tablespoon sesame oil and swirl to coat. Add minced garlic and cook for about 15 seconds until fragrant.

Cook vegetables
Add red bell pepper slices and snap peas to the pan. Stir-fry for 2–3 minutes until crisp-tender.

Combine
Return the prawns to the pan. Add oyster sauce and 1 additional tablespoon soy sauce; toss to coat. Add the cooked rice noodles and toss well to combine. Stir-fry for 1–2 minutes until everything is heated through and coated.

Taste and adjust with salt or pepper if needed. Sprinkle toasted sesame seeds over the top and serve immediately.
