Prepare the beef
Trim and cut the sirloin into 1-inch cubes. Pat dry with paper towels to remove surface moisture.

Season the beef
Season the beef cubes with 2 tsp kosher salt and 1 tsp freshly ground black pepper. Toss to coat evenly.

Sauté garlic and begin glaze
In the same skillet, reduce heat to medium. Add 2 tbs unsalted butter and minced garlic; sauté 30-60 seconds until fragrant.

Make the honey pepper glaze
Stir in 5 tbs honey, 1 tbs soy sauce, 1 tsp balsamic vinegar, and 0.25 tsp red pepper flakes. Simmer 1-2 minutes until the glaze is glossy and slightly thickened.

Finish and glaze
Turn off the heat and whisk in the remaining 2 tbs butter until the sauce is glossy. Taste and adjust salt if needed.

Garnish and rest
Remove from heat, garnish with 0.25 cup chopped parsley. Let the dish rest 2-3 minutes before serving to allow juices to redistribute.
