Preheat and prepare oven
Preheat the oven to 425°F (220°C). Place a rack in the middle of the oven and prepare a large roasting pan.

Make the damp salt crust
In a large bowl, combine 6 cups kosher salt with 2 tablespoons water until the mixture resembles damp sand.

Flavor the cavity
Rinse the lemon and cut into quarters. Crush the garlic cloves and strip the rosemary leaves. Stuff the cavity with lemon quarters, crushed garlic, and rosemary.

Encase the chicken in salt
Spread a thin layer of the damp salt on the bottom of the roasting pan. Place the chicken on top. Pack the remaining damp salt all around the chicken, forming a thick crust that completely encases it.

Roast until done
Bake for 60-90 minutes, or until the internal temperature reaches 165°F (74°C) at the thickest part of the thigh. If needed, cover with foil to prevent over-browning.

Rest and crack the crust
Remove the pan from the oven and let the chicken rest for 10-15 minutes. Crack the salt crust and wipe away any excess salt.
