Salt & Pepper Chicken Wings
Method
Salt & Pepper Chicken Wings
- 1
Prepare the oven and equipment
Preheat oven to 425°F (220°C). Line a large baking sheet with a rack or aluminum foil and place a metal rack on top if you have one.
- 2
Dry wings
Pat the wings dry with paper towels to remove surface moisture; discard towels.
- 3
Make the dry rub
In a large bowl, combine kosher salt, black pepper, smoked paprika, garlic powder, onion powder, baking powder, and chili flakes. Stir to distribute evenly.
- 4
Coat wings with rub and oil
Drizzle 1 tablespoon olive oil over the wings. Add the dry rub and toss well to evenly coat the wings with the mixture.
- 5
Prepare for baking
Spread the coated wings in a single layer on the prepared rack, ensuring they are not crowded to promote even browning.
- 6
Bake
Bake in the preheated oven for 25-30 minutes, then flip the wings and bake 8-12 minutes more until the skin is crispy and the wings reach an internal temperature of 165°F (74°C).
- 7
Optional crisping
If you want extra crispiness, switch to broil on high for 1-2 minutes, watching closely to prevent burning.
- 8
Rest and serve
Remove from oven, let rest 5 minutes, then serve with dipping sauces or a squeeze of lemon if desired.
