    Pat dry and prepare

    Pat the squabs dry inside and out with paper towels. If any giblets remain, remove them. Place squabs on a rack or plate to dry further.

    Make marinade and season

    In a small bowl, whisk together olive oil, melted butter, minced garlic, lemon juice, lemon zest, thyme, rosemary, salt, and pepper. Rub the mixture all over the two squabs, including under the skin where possible. Let sit 20-30 minutes at room temperature to bloom flavors.

    Preheat, sear, and baste

    Preheat oven to 450°F (232°C). Heat a heavy, oven-safe skillet over medium-high heat. Sear the squabs breast-side down until the skin is crisp and golden, about 2-3 minutes. Flip and sear the other side another 2 minutes, brushing with some of the marinade as you go.

    Roast to desired doneness

    Transfer the skillet to the oven (or move squabs to a roasting pan) and roast for 18-25 minutes for medium-rare to medium. Target an internal temperature of 145-150°F (63-66°C) in the breast. Baste once or twice with pan juices during roasting.

    Rest, carve, and serve

    Remove from oven and tent loosely with foil. Allow to rest 8-10 minutes before carving. Serve with pan juices or a light citrus reduction if desired.
