In a small bowl, combine the coleslaw mix with 1 tablespoon of mayonnaise and a pinch of salt and pepper. Toss until evenly coated and slightly creamy.

In another bowl, whisk together the Russian dressing and the remaining tablespoon of mayonnaise until smooth. Set aside.

Prepare the rolls: slice each roll lengthwise without cutting all the way through. If desired, lightly toast the cut sides for 1–2 minutes.

Spread a thin layer of Russian dressing on the inside of the bottom halves of the rolls.

Spread a second light layer of mayonnaise on the inside of the top halves (optional for extra creaminess).

Layer the plant-based turkey slices evenly on the bottom halves.

Top the turkey with provolone cheese slices, allowing them to slightly overlap.

Divide the coleslaw evenly over the cheese, pressing gently to help it stay in place.

Close the sandwiches, press lightly, slice in half, and serve immediately.
