    Prepare and preheat

    Preheat the oven to 170°C (350°F). Grease and line a 23 cm (9-inch) round cake pan with parchment paper.

    Sift dry ingredients

    In a medium bowl, sift together cake flour, baking powder, and salt. Set aside.

    Beat eggs and sugar

    In a large mixing bowl, beat eggs and granulated sugar with an electric mixer on high speed for 6–8 minutes, until thick, pale, and tripled in volume.

    Mix wet ingredients

    In a separate bowl, whisk together vegetable oil, milk, vanilla extract, and pandan essence until smooth.

    Fold batter

    Gently fold the dry ingredients into the egg mixture in 2–3 additions, alternating with the wet ingredients, until just combined. Do not overmix to preserve air.

    Bake

    Pour batter into the prepared pan and bake for 25–35 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover loosely with foil.

    Let the cake cool in the pan for 10 minutes, then turn onto a rack to cool completely. Slice and serve as is, or dust with powdered sugar or pandan dust if desired.
