Catering

  1. 1

    Prep and preheat

Preheat the oven to 425°F (220°C) and line two baking sheets with parchment paper.

  2. 2

    Chicken preparation

Rinse and pat dry 6 cups of chicken breast; cut into uniform strips suitable for kid-sized tenders.

  3. 3

    Coating mix

In a shallow dish, combine 2 cups breadcrumbs with 0.5 cup grated parmesan cheese and a pinch of salt if desired.

  4. 4

    Moisture step

In a separate small bowl, whisk 0.25 cup water to create a thin coating for the chicken to help the breadcrumb mixture adhere.

  5. 5

    Coat chicken strips

Dip each chicken strip into the water, then roll in the breadcrumb-parmesan mixture, pressing gently to ensure full coating.

  6. 6

    Bake the tenders

Place coated strips on the prepared baking sheets and bake for 15 minutes. Flip and bake an additional 10-12 minutes until golden and cooked through.

  7. 7

    Prepare sides

While the chicken bakes, wash and cut baby carrots into sticks and slice apples into thin wedges.

  8. 8

    Dips & portions

Arrange honey mustard dip and vanilla yogurt for dipping. Portion roughly 4 chicken tenders per child with carrot sticks, apple slices, and a yogurt cup.
