Warm the teaware
Rinse a gaiwan or teapot and a cup with hot water to warm them, then discard the water.

Rinse the tea leaves
Add 3 tsp Iron Goddess Tieguanyin to the teapot. Pour 15 ml hot water over the leaves to rinse, swirl for a few seconds, then quickly discard the rinse water.

First infusion
Pour 250 ml hot water (95–100°C / 203–212°F) over the rinsed leaves and steep for 15–25 seconds. Strain into your cup and enjoy the first infusion.

Second infusion
Add another 250 ml hot water to the leaves and steep for 25–35 seconds. Pour into a cup and savor the evolving aroma.

Third infusion
Again, brew with 250 ml hot water for 35–45 seconds. Pour and appreciate the nuanced flavors.

Subsequent infusions
Continue with additional infusions (4th, 5th, etc.). Gradually increase steep time by about 5–10 seconds per infusion; the leaves can typically yield 5–7 pleasant infusions.
