Fries: Prep and bake

Prepare potatoes
Rinse 4 Russet potatoes. Peel if desired and cut into roughly 1/4-inch thick fries.

Soak and dry
Soak the cut potatoes in cold water for 20–30 minutes to remove surface starch. Drain well and pat completely dry.

Season fries
Toss the fries with 2 tablespoons neutral oil, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon smoked paprika, and 1 teaspoon garlic powder until evenly coated.

Bake fries
Spread fries in a single layer on a parchment-lined baking sheet. Bake at 425°F (220°C) for 25–30 minutes, flipping halfway, until crisp and golden.
Toppings: Cook beef and vegetables

Brown Impossible beef
In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add Impossible beef crumbles and cook 5–7 minutes, breaking apart with a spatula until browned and heated through. Season with a pinch of salt and pepper if desired.

Melt cheese and assemble
When fries are hot, lay them on a serving platter. Scatter the seasoned Impossible beef over the fries, then lay cheese slices on top and allow heat to melt the cheese (or briefly broil for 1–2 minutes, watching closely).
