Add the sliced mushrooms; cook 5-6 minutes, stirring occasionally, until browned and any moisture has evaporated.

Push vegetables to the side and add the Impossible ground meat; crumble with a spatula and cook 4-6 minutes until evenly browned and cooked through.

Season the mixture with salt and pepper. If using peppers, add sliced peppers and cook 2-3 minutes more until they are crisp-tender.

Place 2 slices of white American cheese on the bottom halves and allow them to melt slightly from the heat (cover the pan briefly if needed).
