Wok Noodles & Rice Sweets

Method

Wok Noodles & Rice Sweets

  1. 1

    Toast walnuts

Place a dry wok over medium heat. Add the walnuts and toast, stirring often, until deeply fragrant and lightly golden, about 4-6 minutes. Transfer to a plate and set aside.

  2. 2

    Melt butter

In the same wok, melt the unsalted butter over medium heat until foamy.

  3. 3

    Make glaze base

Add brown sugar and salt to the melted butter. Stir until the sugar dissolves and a light caramel forms, about 1-2 minutes. Stir in water to loosen the mixture if needed.

  4. 4

    Add honey and vanilla

Pour in honey and vanilla extract. Bring to a gentle simmer, stirring to combine into a glossy glaze.

  5. 5

    Coat walnuts

Return the toasted walnuts to the wok. Stir to coat evenly with the honey glaze.

  6. 6

Finish with sesame and optional chili

Sprinkle sesame seeds over the coated walnuts. If using, add chili flakes and toss to distribute evenly.

  7. 7

    Set and cool

Spread the glazed walnuts on a parchment-lined tray in a single layer. Let cool completely to set, about 10 minutes.
