Make the glaze and slurry
In a small bowl, whisk together 3 tablespoons low-sodium soy sauce, 2 tablespoons honey, 1 tablespoon rice vinegar, and 1 teaspoon sesame oil until smooth. In a separate small bowl, whisk together 1 teaspoon cornstarch with 2 tablespoons water to form a smooth slurry. Set both aside.

Prep aromatics and peppers
Slice red bell pepper and green bell pepper into thin strips. Peel and mince 3 cloves of garlic. Grate or finely mince 1 tablespoon fresh ginger.

Stir-fry peppers
Heat 1 tablespoon cooking oil in a wok over high heat. Add peppers and 0.25 teaspoon crushed red pepper flakes. Stir-fry for 3-4 minutes until peppers are crisp-tender.

Combine and glaze
Pour the prepared glaze over the peppers. Bring to a gentle simmer, coating the peppers.

Thicken glaze
Stir in the cornstarch slurry and simmer for 1-2 minutes until the sauce thickens and coats the peppers.

Taste and adjust with extra honey or soy if desired. Serve immediately over hot cooked noodles or rice.
