Pat pork dry and prepare rub
Pat the boneless pork loin dry with paper towels.

Mix rub
In a small bowl combine kosher salt, black pepper, garlic powder, smoked paprika, and brown sugar.

Oil & rub application
Rub the pork with olive oil, then press the spice mixture evenly over all sides.

Rest before roasting
Let seasoned pork rest at room temperature for about 15 minutes while the oven preheats.
Honey Glaze

Make glaze
Whisk honey, ketchup, soy sauce, apple cider vinegar, garlic powder, and water in a small bowl until smooth.

Roast pork
Place pork on a rack in a roasting pan. Roast in a preheated 325°F (165°C) oven for 45-60 minutes until the internal temperature reaches 135-140°F (57-60°C).

Brush glaze over the pork, return to the oven, and continue roasting, brushing every 10-15 minutes, until the internal temperature reaches 145-150°F (63-66°C) and the glaze is glossy, about 15-25 more minutes.
