Honey Barbecued Glazed Pork

Prepare glaze and marinade
Whisk together honey, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, olive oil, salt, and pepper until smooth and well combined. Divide the mixture into two portions: about two-thirds for marinating the pork and one-third reserved for glazing during cooking.

Marinate the pork
Pat dry the pork tenderloin. Place in a resealable bag or shallow dish and pour the marinade portion over the pork, coating evenly. Seal and refrigerate for 30 minutes to allow flavors to penetrate.

Preheat the grill
Preheat grill to medium-high heat (about 200°C / 400°F). Lightly oil the grates to prevent sticking.

Grill the pork
Remove pork from marinade (discard the used marinade). Grill the pork, turning every 4-6 minutes and brushing with the glaze portion during cooking, until the internal temperature reaches 145°F (63°C), about 18-22 minutes depending on thickness.

Finish glaze
While the pork cooks, simmer the glaze portion set aside in a small saucepan over medium heat for 3-5 minutes until glossy and slightly thickened. Brush the thickened glaze on the pork just before removing from the grill for a shiny finish.

Transfer the pork to a cutting board and tent loosely with foil for 5-10 minutes. Slice, then serve with your favorite sides and an extra drizzle of glaze if desired.
