    Season the turkey

    Pat the turkey breast dry. Rub with olive oil, then season evenly with salt, black pepper, and garlic powder (if using).

    Roast and shred

    Preheat oven to 325°F (165°C). Place the turkey on a rack in a roasting pan and roast for about 1.5–2 hours, until the internal temperature reaches 165°F (74°C). Remove from oven and let rest 15 minutes, then hand-pull the meat into shreds using two forks.

    Warm the shredded turkey (optional)

    If the turkey needs warming, transfer the shreds to a skillet with a splash of pan juices and heat over low for 4–5 minutes, stirring occasionally.

    Toast the buns

    In a skillet, melt the butter over medium heat. Lightly toast the cut sides of the buns until golden and fragrant.

    Assemble the sandwich

    Spread mayonnaise on the toasted buns. Layer lettuce on the bottom bun, then add tomato slices, onion slices, and a layer of provolone cheese. Pile the warm pulled turkey on top, then cap with the cheese-covered top bun.
