    Separate egg yolks from whites; keep yolks intact for finishing (use pasteurized yolks if raw yolks are a concern).

    Rinse geoduck neck slices; pat dry and arrange thin slices suitable for topping.

    Whisk pumpkin puree with egg yolks, soy sauce, rice vinegar, and sesame oil until glossy.
