Fried Seafood Tofu - Directions

1. Prepare tofu

Press and drain the tofu, then cut into 1-inch thick sticks. Lightly pat dry and drizzle with soy sauce (2 tbs total) to season.

2. Prepare seafood

Pat dry the shrimp and calamari. Toss the shrimp and calamari with 1/2 tsp garlic powder, 1/4 tsp paprika, a pinch of salt, and a pinch of black pepper to season.

3. Egg wash

Beat the eggs with a splash of water and a pinch of salt in a bowl to create an egg wash.

4. Dredging mixture

In a separate bowl combine cornstarch, rice flour, remaining garlic powder (1/2 tsp), remaining paprika (0.25 tsp), and remaining salt and pepper to form the dry coating.

5. Coat tofu

Dip each tofu stick into the egg wash, allowing excess to drip, then coat evenly with the dry mixture. Place aside on a wire rack.

6. Coat seafood

Dip the seasoned shrimp and calamari in the egg wash, then dredge in the same dry coating until fully coated.

7. Heat oil

Pour vegetable oil into a deep skillet or wok and heat to 180C (350F) for frying.

8. Fry tofu

Fry the tofu sticks in batches until golden and crisp, about 2–3 minutes per batch. Remove to a rack or paper towels to drain.

9. Fry seafood

Fry the coated shrimp and calamari in batches until cooked through and crisp, about 2–4 minutes per batch. Drain on paper towels.

10. Make dipping sauce

In a small bowl, whisk together mayonnaise, sweet chili sauce, lemon juice, and sesame oil to create a tangy dipping sauce.

11. Serve

Arrange fried tofu and seafood on a platter. Serve with the dipping sauce and garnish with lemon wedges or fresh herbs if desired.
