Prep and bake
Preheat the oven to 375°F (190°C). Line two baking sheets with parchment paper and set aside.

Make the dough base
In a medium saucepan, combine water, milk, butter, salt, and granulated sugar. Bring to a gentle boil, stirring until the butter melts.

Incorporate flour
Remove from heat and add the all-purpose flour in one go. Stir vigorously until the dough forms a smooth ball that pulls away from the sides.

Dry and cool, then add eggs
Return the dough to the heat for 1–2 minutes to dry it out. Transfer to a mixing bowl and let cool 5–10 minutes. Add eggs one at a time, beating well after each addition until the dough is thick, smooth, and glossy.

Pipe and bake
Transfer dough to a piping bag fitted with a large round tip. Pipe 1.5-inch rounds (or mounds) on the prepared sheets, spacing well apart.

Bake and cool
Bake 20–25 minutes until puffed and golden. Do not open the oven during the first 15 minutes. Remove from oven and cool completely on a rack before filling.

In a chilled bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form.

Fold in durian
Gently fold the durian flesh puree into the whipped cream until evenly distributed.

Refrigerate the filling for 15–30 minutes to thicken slightly before piping.
Assemble and finish

Fill the shells
Slice each puff shell horizontally to create a top and bottom. Pipe or spoon a generous amount of durian cream onto the bottom half.

Place the top half back on the filled bottom. Dust with powdered sugar and chill for 15 minutes before serving.
