Soak and shred dried scallops

Place dried scallops in warm water and soak for 20–30 minutes until softened. Drain, reserve 2–3 tablespoons of soaking liquid, and shred scallops into bite-sized pieces.

Prep eggs and aromatics

Beat eggs with a pinch of salt until smooth. Mince garlic. Slice spring onions, separating white/green parts; set aside the greens for garnish.

Cook aromatics and scallops

Heat a wok or large skillet over high heat. Add vegetable oil and swirl. Add minced garlic and sauté 20–30 seconds until fragrant. Add shredded dried scallops and stir-fry 1–2 minutes until lightly browned.

Scramble eggs

Push scallops to the side, pour in beaten eggs into the wok, scramble until just set, then mix with scallops.

Stir-fry peas and rice

Add peas and cooked rice to the wok. Break any clumps and stir-fry 2–3 minutes until heated through and evenly coated with seasonings.

Season

Return eggs and scallops to the wok. Add soy sauce and oyster sauce; toss to coat. Drizzle sesame oil, sprinkle white pepper, and adjust salt to taste. Stir-fry 1 minute more.

Finish and serve
