The Bobbie Prep & Assembly

American Wagyu Slaw Be Jo Prep & Assembly

Italian Sub Prep & Assembly

Method

The Bobbie Prep & Assembly

  1. 1

    Prepare turkey

Season and roast or rewarm the turkey breast. Let cool slightly, then slice into thin, even pieces.

  2. 2

    Cranberry sauce & cranberry mayo

If making cranberry sauce from fresh berries, simmer until thickened. Mix cranberry sauce with a touch of mayo to create cranberry mayo, yielding about 1 cup.

  3. 3

    Assemble Bobbie components

Split potato rolls. Spread a thin layer of cranberry mayo on the cut side. Layer turkey slices, a small mound of stuffing, and a spoonful of cranberry sauce on each roll. Close sandwiches.

  4. 4

    Best-for-tray prep

Arrange assembled The Bobbie sandwiches on a platter, label as 'The Bobbie'. Cover with plastic wrap until service.

American Wagyu Slaw Be Jo Prep & Assembly

  1. 5

    Prepare Wagyu beef

Warm slices of American Wagyu beef in a skillet or on a steam tray until just heated through; avoid overcooking.

  2. 6

    Mix coleslaw

Toss coleslaw mix with slaw dressing until evenly coated. Chill for at least 15 minutes to meld flavors.

  3. 7

    Toast rolls

Lightly toast hoagie rolls to golden brown; allow to cool slightly.

  4. 8

    Assemble Wagyu Slaw Be Jo

Spread a thin layer of dressing on roll bottoms, add Wagyu beef, a generous helping of slaw, and top with roll halves. If using jalapeño slices, add a few on top for heat.

  5. 9

    Tray placement

Arrange sandwiches on a serving tray, ensuring even portions across the tray.

Italian Sub Prep & Assembly

  1. 10

    Prepare deli meats

Shingle Genoa salami, capicola, and mortadella in even layers on clean cutting boards.

  2. 11

    Cheese & veg prep

Slice provolone, wash and pat greens (lettuce). Slice tomatoes.

  3. 12

    Giardiniera & seasoning

Rinse giardiniera if desired, then drain. Mix with a light drizzle of olive oil and a splash of red wine vinegar.

  4. 13

    Dress rolls

Lightly brush hoagie rolls with olive oil and season with salt and pepper.

  5. 14

    Assemble Italian subs

Layer meats, cheese, lettuce, tomato, and giardiniera on rolls. Drizzle with light oil/vinegar mix; close sandwiches.

  6. 15

    Tray assembly

Slice sandwiches if desired into portions and arrange on a tray labeled 'Italian Sub'.

Final Tray Assembly & Service

  1. 16

    Label and portion

Keep each sub type on distinct sections of the tray. Use labels and color-coded picks to distinguish The Bobbie, Wagyu Slaw Be Jo, and Italian Sub.

  2. 17

    Chill and transport

Maintain cold items at 40 F (4 C) or below until service. Transport in refrigerated platters as needed.

  3. 18

    Serving suggestions

Provide napkins, utensils, and toothpicks. Offer pickles, extra mayo or olive oil for guests to customize.
