- 1
Prepare turkey
Season and roast or rewarm the turkey breast. Let cool slightly, then slice into thin, even pieces.

Cranberry sauce & cranberry mayo
If making cranberry sauce from fresh berries, simmer until thickened. Mix cranberry sauce with a touch of mayo to create cranberry mayo, yielding about 1 cup.
- 3
Assemble Bobbie components
Split potato rolls. Spread a thin layer of cranberry mayo on the cut side. Layer turkey slices, a small mound of stuffing, and a spoonful of cranberry sauce on each roll. Close sandwiches.
- 4
Best-for-tray prep
Arrange assembled The Bobbie sandwiches on a platter, label as 'The Bobbie'. Cover with plastic wrap until service.
American Wagyu Slaw Be Jo Prep & Assembly
- 5
Prepare Wagyu beef
Warm slices of American Wagyu beef in a skillet or on a steam tray until just heated through; avoid overcooking.
- 6
Mix coleslaw
Toss coleslaw mix with slaw dressing until evenly coated. Chill for at least 15 minutes to meld flavors.
- 7
Toast rolls
Lightly toast hoagie rolls to golden brown; allow to cool slightly.
- 8
Assemble Wagyu Slaw Be Jo
Spread a thin layer of dressing on roll bottoms, add Wagyu beef, a generous helping of slaw, and top with roll halves. If using jalapeño slices, add a few on top for heat.
- 9
Tray placement
Arrange sandwiches on a serving tray, ensuring even portions across the tray.
Italian Sub Prep & Assembly

Prepare deli meats
Shingle Genoa salami, capicola, and mortadella in even layers on clean cutting boards.
- 11
