Score the skin on the pork belly with shallow cuts about 1 cm apart, taking care not to cut into the meat.

Season the meat with kosher salt, rubbing it into the flesh. Leave the skin relatively dry. Optional: refrigerate uncovered for 6–12 hours to help dry the skin for crisper results.

In a small bowl, combine baking powder, white pepper, smoked paprika, garlic powder, and brown sugar.

Finish and Roast

Place the pork belly on a rack set over a baking sheet, skin side up.
