    Pat the pork belly dry with paper towels to remove excess moisture.

    Score the skin on the pork belly with shallow cuts about 1 cm apart, taking care not to cut into the meat.

    Season the meat with kosher salt, rubbing it into the flesh. Leave the skin relatively dry. Optional: refrigerate uncovered for 6–12 hours to help dry the skin for crisper results.

    Brush the pork belly surface with olive oil to help the spice rub adhere.

    Evenly rub the spice mixture over the meat surface, with extra focus on the skin to maximize crispness.

Finish and Roast

    Place the pork belly on a rack set over a baking sheet, skin side up.

    Roast in a preheated oven at 450°F (230°C) for 25–30 minutes to blister the skin.

    Reduce the oven to 325°F (165°C) and continue roasting for 60–90 minutes, until the meat is tender and the fat renders.
