1. Cook noodles
Bring a large pot of water to a rolling boil. Add fresh egg noodles and cook until just al dente, about 2–3 minutes. Drain, rinse under cold water to stop cooking, and toss with a light drizzle of sesame oil to prevent sticking.
2. Prepare aromatics
Mince the garlic. Peel and grate the ginger. Slice green onions thinly, keeping the green tops for garnish.
3. Stir-fry aromatics
In a large wok or skillet, heat neutral oil over medium-high heat. Add garlic and ginger and stir-fry for about 30–60 seconds until fragrant.
4. Add crab and roe
Add crab meat and crab roe to the wok. Stir-fry for 1–2 minutes to warm through and coat with aromatics.
5. Sauce it up
Pour in soy sauce, oyster sauce, Shaoxing wine, and rice vinegar. Add salt and black pepper. Cook for another minute to blend flavors.
6. Combine and finish
Return noodles to the wok and toss to coat with the sauce. Add a splash of water or stock if needed to loosen. Drizzle with sesame oil, add green onions, and finish with sesame seeds as a garnish.
