Brookie Base (Brownie layer)

Method

Cookies

    In a bowl, cream butter with granulated sugar and brown sugar until light and fluffy. Beat in the egg and vanilla until combined.

    Combine dry ingredients

    Stir in flour, baking soda, and salt until just combined. Fold in chocolate chips.

    Portion & chill

    Divide dough into 6 equal portions and chill on a plate for 20 minutes to help cookies hold their shape.

    Bake cookies

    Preheat oven to 350°F (177°C). Place dough portions on parchment-lined sheet, spaced about 2 inches apart. Bake 12–14 minutes until edges are set. Cool on a rack.

Brookie Base (Brownie layer)

    Make brownie batter

    Melt butter and whisk in sugar until smooth. Add eggs one at a time, whisking after each. Stir in vanilla.

    Add dry ingredients

    Sift in cocoa powder, then mix in flour and salt until just combined. Fold in chocolate chips if using.

    Bake brownie base

    Line an 8x8-inch pan with parchment. Pour batter into pan and spread evenly. Bake at 350°F (177°C) for 18–22 minutes until the top is set and a toothpick comes out with moist crumbs.

Assemble & Bake Brookies

    After the brownie base has baked for about 14 minutes, dollop 6 large spoonfuls of cookie dough on top of the brownie surface. Gently press to flatten into an even layer.

    Finish baking

    Return to oven and bake 12–15 more minutes until the cookie dough is set and the brownie is baked through. Remove and cool completely.

    Cut & serve

    Once cooled, lift from pan using the parchment and cut into 6 equal brookie squares.

Bake Cookies (on tray)

    Optional additional cookies

    If you want a separate set of cookies, bake the six cookie dough portions from the Cookies section on a second parchment-lined sheet pan at 350°F (177°C) for 12–14 minutes, rotating halfway.
