    Preheat the oven to 325°F (165°C). Pat the turkey breast dry, then rub with olive oil, kosher salt, black pepper, garlic powder, and paprika to coat evenly.

    Place the seasoned turkey breast in a roasting pan and roast in the preheated oven until the internal temperature reaches 165°F (74°C), about 1½ to 2½ hours depending on size. Baste with pan juices every 30 minutes if possible.

    Remove the turkey from the oven and tent loosely with foil. Let rest for 15–20 minutes, then shred the meat into hand-pulled strands.

    While the turkey rests, prepare the coleslaw: in a large bowl, combine coleslaw mix with coleslaw dressing. Refrigerate until ready to assemble.

    Spread Russian dressing on the cut sides of the rolls, and spread mayonnaise on the other cut sides if desired.

    Assemble the sandwiches: on each roll, layer a portion of hand-pulled turkey, 2 slices of provolone cheese, and a generous heap of coleslaw. Close with the top half of the roll.

    Optional: If you like melted cheese, place the assembled sandwiches on a sheet pan and broil for 1–2 minutes or heat in a warm oven until cheese melts.
