Method

Hot Subs

  1. 1

    Prep meatball mix

In a large bowl, combine ground beef, breadcrumbs, Romano cheese, parsley, garlic, egg, milk, salt, pepper, and 1 tablespoon of olive oil. Mix gently until just combined; do not overwork the meat. Shape into 16-20 meatballs about 1.5 inches in diameter.

  2. 2

    Bake meatballs

Preheat oven to 400°F (200°C). Lightly oil a baking sheet. Space meatballs evenly and bake for 15-20 minutes until browned and an internal temperature of 165°F (74°C) is reached.

  3. 3

    Make sauce

While meatballs bake, heat the remaining olive oil in a heavy pot over medium heat. Add the remaining garlic and cook 30-60 seconds until fragrant. Stir in marinara sauce and oregano; simmer 10-15 minutes to blend flavors.

  4. 4

    Finish meatballs in sauce

Gently add the baked meatballs to the sauce. Simmer 5-10 minutes to coat the meatballs in sauce and finish cooking if needed.

  5. 5

    Toast rolls

Split each roll lengthwise, brush the inside with melted butter, and toast in a skillet or under the broiler for 1-2 minutes until lightly golden.

  6. 6

    Assemble sandwiches

Place 2 slices of provolone on the bottom half of each roll. Spoon several meatballs with sauce onto each roll, nestling them before closing with the top half. Sprinkle 2 tablespoons grated Romano on top.

  7. 7

    Serve

If desired, broil briefly to melt the cheese. Serve hot.
