    If using dried ho fun noodles, soak in warm water until pliable, about 15-20 minutes, then drain well.

    In a bowl, combine beef with 1 tbsp light soy sauce, 1 tbsp Shaoxing wine, 0.5 tsp sugar, 1 tsp cornstarch, and 1 tsp sesame oil. Toss to coat and let sit for 15 minutes.

Stir-fry beef

    Heat 1 tablespoon of neutral oil in a large wok over high heat. Add the marinated beef in a single layer and sear until just browned, 1-2 minutes per side. Remove to a plate and set aside.

Aromatics and vegetables

    In the same wok, add the remaining oil. Add minced garlic and ginger; stir-fry until fragrant, about 30 seconds.

    Add red bell pepper; stir-fry 1 minute. Add bean sprouts; stir-fry another 30-60 seconds.

Combine with noodles and sauces

    Return beef to the wok. Add noodles, 2 tablespoons light soy sauce, 1 tablespoon dark soy sauce, 2 tablespoons oyster sauce, and 1 tablespoon Shaoxing wine. Toss thoroughly to coat and heat through, about 1-2 minutes.

Finish and serve

    Drizzle with sesame oil to taste, sprinkle green onions and sesame seeds over the top, and season with salt to taste. Toss once more and serve hot.
