    Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.

    Scrub and cut the potatoes into evenly sized 1/4-inch thick fries; soak in cold water for 15 minutes to remove excess starch, then pat dry thoroughly.

    Toss the potato sticks with olive oil, salt, paprika, garlic powder, and black pepper; sprinkle with cornstarch and toss again to coat.

    Spread fries in a single layer on the prepared sheet; bake 20-25 minutes, then flip and bake 5-7 minutes more until golden and crisp.

    Remove from oven, season to taste with extra salt, and keep warm.

Cheesesteak Toppings

    Prepare the steak

    Pat the flank steak dry and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

    Heat a large skillet over medium-high heat and add 1 tablespoon neutral oil; sear the steak for 2-3 minutes per side until browned and cooked to your liking; remove and rest loosely.

    In the same skillet, add 1 tablespoon butter. Add sliced onion and cook 4-6 minutes until translucent and lightly caramelized; add mushrooms and cook 4-5 minutes until browned.

    Slice the rested steak thinly against the grain; return to the pan with onion and mushrooms, stirring to combine.

    Top the meat mixture with 8 slices of white American cheese; cover briefly to allow cheese to melt smoothly into the mixture.

Assemble and serve

    Spread the crispy fries on a serving platter or plate.

    Spoon the steak, onions, mushrooms and melted cheese over the fries, ensuring even coverage.
