    Noodles prep

    If using dried wide rice noodles, soak in warm water for 20-30 minutes until pliable, then drain. If using fresh noodles, separate them gently and set aside.

    Beef marinade

    In a bowl, combine 1 tablespoon light soy sauce, 1 teaspoon Shaoxing wine, 1 teaspoon cornstarch, and 0.5 teaspoon sugar. Add the thinly sliced beef and toss to coat. Let marinate for 15-20 minutes.

    Marinated beef stir-fry

    Heat 1-2 tablespoons of oil in a wok or large skillet over high heat. Add the marinated beef in a single layer and sear until browned on both sides, about 1-2 minutes total. Remove beef and set aside on a plate.

    Aromatics

    In the same wok, add a little more oil if needed. Add minced garlic and minced ginger; stir-fry until fragrant, about 30 seconds.

    Vegetables

    Add bok choy (or napa cabbage) and bean sprouts; stir-fry for 1-2 minutes until vegetables are just wilted but still vibrant.

    Sauce and combine

    Return the beef to the wok. Add 2 tablespoons light soy sauce, 1 tablespoon dark soy sauce, 1 tablespoon oyster sauce, and 0.25 cup water. Stir to coat everything and bring to a gentle simmer.

    Add the drained noodles to the wok. Toss quickly with tongs to coat evenly with sauce and heat through, about 1-2 minutes. Drizzle with sesame oil (if using) and sprinkle the chopped green onions. Adjust salt and pepper to taste.
