Bbq Chicken Party Tray Recipe
Fresh grilled chicken breast, mixed greens, crispy cheddar onions, diced tomatoes, corn, black beans, BBQ sauce, and chipotle ranch dressing. Serves 6-8. For large orders, please call the shop. Ingredients may vary in Hawaii.

Prepare and preheat
Preheat grill to 400-450°F. Lightly oil the grates. Set up a large catering tray for assembly.

Season the chicken
Pat the chicken dry. Toss with olive oil, then season with salt and pepper.

Grill the chicken
Grill the chicken breasts, turning once, until an internal temperature of 165°F is reached. Rest 5 minutes, then slice into thick strips.

Prepare vegetables and toppings
Grill or char the corn until browned. Cut the kernels from the cob. Dice tomatoes and drain the black beans.

Crispy cheddar onion topping
If using pre-made crispy cheddar onions, set aside. If desired, warm slightly in a 350°F oven for 3-5 minutes.

Assemble base
Spread mixed greens over the catering tray as a base.

Assemble tray
Distribute sliced chicken over the greens. Scatter tomatoes, corn, and black beans on the tray.

Serve
Offer the remaining 1 cup BBQ sauce and the chipotle ranch dressing on the side (2 cups).
