Preparation and assembly

    Glaze walnuts

    In a dry skillet over medium heat, toast walnuts 2–3 minutes until fragrant. Add balsamic glaze (2 tablespoons) and toss to coat the walnuts evenly. Cook for 1 minute more until glossy, then transfer to parchment and let cool.

    Grill chicken

    Season chicken breasts with salt and pepper. Grill over medium-high heat 6–7 minutes per side or until fully cooked (internal temperature 165°F / 74°C). Remove from heat and let rest for 5 minutes, then slice thinly.

    Make dressing

    Whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper in a small bowl until emulsified.

    Toss greens and prepare base

    In a large bowl, toss mixed greens with enough dressing to lightly coat. Transfer greens to two serving plates.

    Add toppings

    Top greens with sliced chicken, gorgonzola cheese crumbles, and glazed walnuts.

    Drizzle any remaining dressing over the top if desired. Serve immediately.
