Reduce and finish
Let the mixture simmer gently for 15–20 minutes to meld flavors. Taste and adjust salt if needed. Strain solids and keep the clarified liquid hot.
Wagyu Beef Preparation

Season and sear Wagyu
Season the Wagyu beef slices with 0.5 tsp black pepper. In a hot skillet with a light coat of oil, sear the slices for about 2–3 minutes per side until browned and just past rare. Remove and let rest briefly.

Toast and mayo the bread
Slice the baguette lengthwise. Spread 1 tablespoon of mayonnaise on each inner side. In a hot skillet or under a broiler, toast the bread halves until lightly crispy and golden.
Assemble and Melt Cheese

Assemble and melt Swiss
Layer the seared Wagyu beef on the bottom halves, then top with Swiss cheese slices. Place under a broiler or in a hot oven just until the cheese melts and flows over the beef.

Serve with hot au jus for dipping
Carefully place the top halves on the sandwiches, cut into portions, and serve immediately with warm au jus on the side for dipping.
