    Prepare the roux

    In a large pot, heat the vegetable oil over medium heat. Once hot, add equal parts flour and oil (about 1/2 cup each) to make a roux. Stir constantly until it turns a dark brown color, similar to chocolate, about 15-20 minutes.

    Sauté vegetables

    Add the chopped onion, bell pepper, celery, and garlic to the roux. Sauté for about 5 minutes or until the vegetables are tender.

    Add meats and spices

    Stir in the Andouille sausage and chicken thighs. Cook for another 5 minutes. Then add the diced tomatoes, chicken broth, bay leaves, cayenne pepper, thyme, paprika, salt, and black pepper.

    Simmer the gumbo

    Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.

    Add shrimp and okra

    Add the shrimp and okra to the pot. Cook for an additional 10 minutes until the shrimp are cooked through.

    Serve

    Remove bay leaves before serving. Serve the gumbo over cooked rice in bowls.
