Sear the Chicken
In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and black pepper, then add them to the skillet. Sear the chicken for about 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.

Add Tomatoes and Broth
Stir in the canned diced tomatoes with their juice, chicken broth, Creole seasoning, and bay leaves. Bring the mixture to a simmer.

Combine Chicken and Simmer
Return the seared chicken thighs to the skillet, nestling them into the sauce. Cover and let it simmer for about 25-30 minutes, or until the chicken is cooked through and tender.

Finish and Serve
Remove the bay leaves. Adjust seasoning with salt and pepper if needed. Serve hot, garnished with chopped fresh parsley.
