Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Place the potato strips in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and prevents them from sticking together.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry using a clean kitchen towel or paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

Fry the Potatoes
Carefully add a handful of potato strips to the hot oil. Fry them in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown.

Drain and Season
Remove the fries with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt, black pepper, and garlic powder to taste.
