1. Prepare the Potatoes
Preheat your oven to 400°F (200°C). Wash and poke holes in the baking potatoes with a fork. Bake for about 45-60 minutes until tender. Let them cool, then scoop out the insides into a bowl.
2. Cook the Aromatics
In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
3. Combine Ingredients
Add the scooped potato insides, broth, salt, and black pepper to the pot. Stir well and bring to a simmer. Let it cook for about 15 minutes, allowing the flavors to meld together.
4. Blend the Soup
Using an immersion blender, blend the soup until smooth. You can also transfer it to a blender in batches if needed.
5. Add Cream and Cheese
Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
6. Serve
Ladle the soup into bowls and top with crumbled bacon, sliced green onions, and additional cheese if desired.
