Preparing the Steak

    Season the Steak

    Pat the ribeye steaks dry with paper towels. Rub olive oil over both sides of the steaks, then season generously with salt, black pepper, and garlic powder.

    Preheat the Grill

    Preheat your grill to high heat (around 450°F or 232°C).

    Grill the Steaks

    Place the seasoned steaks on the grill. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Add fresh rosemary sprigs during the last minute of cooking for added flavor.

    Rest the Steaks

    Remove the steaks from the grill and let them rest for 5-10 minutes before slicing.

Making the Fries

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Preheat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain and pat the potato strips dry. Fry them in batches for about 5-7 minutes until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil. Sprinkle immediately with salt.

Serving

    Plate the Dish

    Slice the rested steaks against the grain and serve alongside the fries. Garnish with chopped fresh parsley and a side of mayonnaise if desired.
