Preparing the Calamari

Clean the Calamari
If not already cleaned, remove the head and internal organs from the calamari, rinse under cold water, and cut into rings.

Bread the Calamari
Dip each calamari ring first into the flour mixture, then into the beaten eggs, and finally coat it with the bread crumbs. Ensure each ring is well coated.
Frying the Calamari

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches. Do not overcrowd the pot. Fry for about 2-3 minutes or until golden brown.

Drain and Serve
Remove the fried calamari with a slotted spoon and place on a paper towel-lined plate to drain excess oil. Serve hot.
Making the Marinara Sauce

Add Tomatoes and Seasonings
Add the crushed tomatoes, oregano, salt, and sugar. Stir well and let simmer for about 15 minutes to let the flavors meld.

Finish the Sauce
Stir in the chopped basil just before serving. Adjust seasoning to taste.
