Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, salt, and black pepper. Brush this mixture over the salmon fillets and let them marinate for at least 15 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  3. 3

    Grill the Salmon

Place the marinated salmon fillets on the grill. Grill for about 6-7 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Cooking the Vegetables

  1. 4

    Prepare the Vegetables

Wash and trim the asparagus. Peel and slice the carrots. Cut the bell pepper into strips.

  2. 5

    Grill the Vegetables

In the last 10 minutes of grilling the salmon, add the vegetables to the grill. Cook until tender and slightly charred, about 5-7 minutes, turning occasionally.

Making the Lemon Butter Sauce

  1. 6

    Melt the Butter

In a small saucepan over medium heat, melt the butter.

  2. 7

    Combine Ingredients

Once the butter is melted, add minced garlic and sauté for about 1 minute until fragrant. Then stir in lemon juice and chopped parsley. Cook for an additional 1-2 minutes, then remove from heat.

Serving

  1. 8

    Plate the Dish

On a serving plate, place the grilled salmon fillet and arrange the grilled seasonal vegetables around it. Drizzle the lemon butter sauce over the salmon and vegetables.

  2. 9

    Garnish and Serve

Garnish with additional parsley if desired and serve immediately.
