Preparation of Chicken

Marinate the Chicken
In a bowl, combine the chicken breasts with olive oil, salt, and black pepper. Make sure the chicken is well-coated with the marinade. Let it sit for at least 15 minutes.

Grill the Chicken
Preheat your grill to medium-high heat. Place the marinated chicken breasts on the grill and cook for 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.
Assembling the Sandwich

Prepare the Bread
While the chicken is resting, toast the slices of whole grain sandwich bread on the grill or in a toaster until golden brown.

Slice the Tomato
Wash the tomato thoroughly, then slice it into thin rounds.

Assemble the Sandwich
Spread 1 tablespoon of mayonnaise on one side of each slice of toasted bread. On two slices, layer the lettuce leaves, followed by slices of grilled chicken. Top with tomato slices and cover with the remaining slices of bread, mayo side down.

Serve
Cut the sandwiches in half and serve immediately with your choice of side.
