Prepare Calamari

Soak Calamari
In a medium bowl, soak the calamari rings in buttermilk for at least 30 minutes in the refrigerator to tenderize them.

Mix Dry Ingredients
In a shallow dish, combine the all-purpose flour, cornstarch, paprika, garlic powder, salt, and black pepper. Mix well.
Prepare Marinara Sauce

Cook Marinara Sauce
In a small saucepan over medium heat, heat the olive oil. Add minced garlic and sauté until fragrant, about 1 minute. Add crushed tomatoes, oregano, salt, and black pepper. Simmer for 15 minutes. Stir in fresh basil before serving.

Bread and Fry
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge each ring in the flour mixture to coat thoroughly. Carefully place the coated calamari into the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Serve the fried calamari hot with the marinara sauce on the side for dipping.
